Chef Russell Ransom. MBA
Culinary Department Chair
Russell Ransom has more than 20 years of experience spanning catering, hotels, and restaurants. From Executive Sous Chef at The Daily Dish to Executive Chef at The Mount Pleasant Grille, Russell has contributed to Nashville's thriving culinary scene. He holds an MBA from Strayer University and brings real-world expertise from top establishments including Omni Resort Hotel, helping students learn culinary techniques and industry business practices.
Mark Mabry, MFA, Ed.D
Graphic Design Department Chair
Award-winning designer with 20 years of experience including 10 years as Art Director, plus owner of Mabry Creative. Dr. Mabry holds a Doctorate in Education and Master of Fine Arts in Graphic Design from SCAD. He's a published author and member of the American Advertising Federation Nashville, combining academic expertise with active professional practice.
Mark Fleming B.S.
Illustration Program Director
Creative Director turned entrepreneur who built a client base from a handful to over 300 through his company Creative Avenue. Mark's illustration work spans digital animations for companies to fine art gallery showings. He stays current with industry technology including Adobe Creative Suite and Blender, ensuring students learn cutting-edge techniques.
Tom Stanford B.A.
Photography and Video Programs Director
Former Photography Director at The Tennessean with experience covering NFL, NHL, music festivals, and the 2000 Sydney Olympics. Tom coordinated visual coverage for Nashville's historic 2010 flood, earning the paper a Pulitzer Prize nomination. He's worked on multiple book projects and continues practicing professional photography while teaching the next generation.

Today we joined instructor Craig Nolan’s Health, Nutrition, and Exercise Science class at @c2attackvolleyballclub in Hendersonville. This course is built to show our creative students how physical wellness, posture, and energy balance directly support a sustainable artistic career.
Part of that means getting outside our comfort zones, trying new things, and yes—even playing a few matches against Nossi’s president, @cyrusvatand00st

Inside an Art Direction Pitch Day at Nossi 💼🖥️
We spent some time in Mark Mabry’s class watching graphic design students pitch their 4-week nonprofit PSA campaigns. This advanced course completely mimics a real creative agency critique, especially with a full room of peers watching and the instructor breaking down live industry feedback.
Seeing these future art directors stand up, share their concepts, and process real-time notes is exactly how we prepare students for creative careers in Nashville and beyond.

Advanced Portrait Lighting in Studio B 📸💡

This advanced course challenges students to push their workflow from concept to final output. For this lab, the focus was entirely on hands-on experimentation, learning how to manipulate speed lights and diffusers in real time to capture the perfect raw image before it ever hits post-production.

American Cuisine Classics in the Lab 🍗🧁
Swipe for a behind-the-scenes look at the American Cuisine class. We recently visited instructor Chef SC during their class where our Culinary Arts students broke off into groups of four to practice timing, teamwork, and advanced plate presentation.
The students executed a full contemporary menu including an egg cucumber and tomato salad, chicken with farro and artichokes, and angel food cupcakes topped with whipped vanilla cream.
Because timing and organization are emphasized in this course, students had to manage multiple components simultaneously while in production. They focused on searing the chicken to a perfect golden crisp while also folding delicate egg whites for the scratch-made cupcakes.

On Sunday, Rey’s team of elite guest chefs took over Nossi’s premier kitchen facilities for full event prep, giving our Culinary Arts students the chance to jump on the line and assist with production. The momentum carried right into the dinner service at @sushibarrestaurants on Monday and Tuesday, where our student volunteers worked alongside Nossi’s Culinary Arts Chair Chef @russell.ransom and alumnus @chefluchofb to help execute a high-end menu.
A massive thank you to Rey Bello for collaborating with us on this experience, the team at Sushi Bar for hosting, and Chef Álvaro Clavijo for inspiring our students. This is the power of the Nossi network. Our students get direct access to industry icons, real-world kitchen pressure, and elite hands-on opportunities.
