We’re back at it with our friends at the Nashville Farmers Market for one of the most beloved seasonal celebrations: the Turnip Green Festival! On Saturday, November 1st, 2025, from 10am - 2pm, Nossi Culinary students and chefs will be showcasing fresh, creative recipes that highlight the best of fall produce.
If you joined us at the Fall Ball, Y’all Festival earlier this season, you’ll remember the crowd-pleasing demos and tastings that had everyone talking. This festival promises the same energy, with a new lineup of dishes you’ll want to recreate at home.
Our chefs, alongside a team of culinary student volunteers, will be hosting live cooking demonstrations at 11am and 1pm. These recipes are designed to be approachable, flavorful, and easy to make at home!
RECIPES
Tunip Greens with Roasted Turnips and Balsamic Glaze
Yield – 12 4 oz servings
Ingredients:
¼ cup Shallots, sliced
4 Cloves Garlic, minced
1/8 cup bacon, diced
1/8 cup ham, diced
½ # Pork neck bone
½ cup white wine
2 T apple cider vinegar
¼ cup sugar
1 T paprika
1 t cayenne
2 lbs Turnip Greens
4 cups Chicken stock
Louisiana Hot sauce to taste
Directions:
Wash and peel butternut squash.
Toast pine nuts.
1. Render bacon, add onions and garlic to fat and sweat until translucent. About 3 mins
2. Add ham and neck bone and cook 3-4 mins
3. Deglaze with white wine and cider vinegar
4. Add sugar and stir to dissolve
5. Stir in Parpika and Cayenne. Add Greens and Stock
6. Simmer on low 2-3 hours until stock has reduced by half or more.
7. Correct Salt and Pepper seasoning and add hot sauce to taste.
Roasted Turnips
Ingredients:
4 ea turnips, ½ wedges
½ white onion, small dice
Oil, to coat, salt and pepper. Roast or pan-fry until tender and golden brown.
- Plate on top of turnip greens with a balsamic reduction drizzle.
Turnip Green Frittata
5 eggs
2 egg whites
2 T parsley, minced
1 /4 t each salt and pepper
1T oil
1 cup onion diced
¼ cup grape tomatoes, halved
1 cup cooked greens
¼ parm, grated
½ cup roasted turnips
Directions
1. Whisk eggs and stir in parsley, salt, and pepper
2. Heat oil. Lightly saute onion 5 mins.
3. Stir in tomatoes and roasted turnips and cook 1-2 mins
4. Add greens and cook until heated through. 1 min
5. Pour in egg mixture over greens and cover. Cook until the edges of the egg have set, about
five minutes.
6. Uncover frittata and sprinkle with Parm. Broil until the cheese is golden brown and the center of the frittata is set.
